The two subclasses are very different and very good, in their own ways, but there's no question in my mind that arcane trickster wins on pure versatility. It gives you illusions or enchantments to handle things creatively in ways beyond just high stealth rolls, it can give you potent combat spells, and basically all the other utility you could ask from from low-level arcane spellcasting. Whereas the arcane trickster, depending on your spell selection, can do all of that, or you can branch out in different directions. What it does do is further improve your rogue strengths, from skills (psychic whispers), to combat (psychic blades, homing strikes, rend mind), to stealth (psychic veil). There's no question that the soulknife is a highly effective rogue subclass, but other than psychic whispers and maybe psychic teleportation, I wouldn't say that it makes you more versatile. And it's going to take a while to get those feats. Ranged focused arcane tricksters are probably the most optimal way to build them but its not as DPR focused, grabbing web and hypnotic pattern, staying at range with a familiar for advantage against non webbed enemies.
